Ingredients & Substitutions
Each of these ingredients plays a key role in creating the perfect Samoa cookie.
Here’s why they’re essential and some suggested substitutions:
- Kraft caramel bits – These melt quickly and easily, making them perfect for the caramel layer. If you don’t have caramel bits, you can use regular soft caramels and unwrap them before melting.
- Milk – Helps thin the caramel so it spreads evenly over the cookies. You can use heavy cream for an even richer caramel layer.
- Unsweetened coconut flakes – Lightly toasting them enhances their nutty flavor. If you prefer sweetened coconut, it will work, but the cookies will be a bit sweeter.
- Keebler Fudge Stripe Cookies – These act as the perfect base, mimicking the shortbread texture of traditional Samoa cookies.
- Milk chocolate chips – Used for the signature chocolate drizzle on top. You can also use semi-sweet chocolate for a richer flavor.
- Vegetable shortening or coconut oil – Helps smooth out the melted chocolate for a glossy drizzle. Coconut oil adds a slight tropical flavor.

How to Make Easy Samoa Cookies
These cookies are so simple to assemble!
Here’s how to make them step by step:

Pro Tips
- Toast the coconut – This enhances its flavor and prevents the cookies from tasting too sweet.
- Work quickly with the caramel – It thickens fast, so keep reheating in short bursts as needed.
- Use parchment or wax paper – It makes cleanup easy and prevents the cookies from sticking.
- Let the chocolate set – For a professional-looking finish, let the chocolate harden completely before serving or storing.
Serving Recommendations
- With coffee or tea – The caramel and coconut pair wonderfully with a warm drink.
- As an ice cream topping – Crumble them over vanilla ice cream for a decadent treat.
- Dipped in milk – Just like regular cookies, they’re great with a cold glass of milk.
- For parties or gifting – Package them in a decorative tin for a thoughtful homemade gift.

Recipe Variations
- Dark Chocolate Samoa Cookies – Swap the milk chocolate for dark chocolate for a richer taste.
- Almond Joy-Inspired – Add chopped almonds to the caramel-coconut mixture for a nutty twist.
- Salted Caramel Samoa Cookies – Sprinkle a little flaky sea salt over the caramel for a gourmet touch.
- Homemade Shortbread Base – If you don’t have Fudge Stripe cookies, use homemade or store-bought shortbread cookies instead.

Easy Samoa Cookies
Ingredients
- 10 oz bag Kraft caramel bits
- 2 Tbsp milk
- 7 oz bag unsweetened coconut flakes, lightly toasted
- 11 oz pkg Keebler Fudge Stripe Cookies
- 1 cup milk chocolate chips
- 1 tsp vegetable shortening or coconut oil
Directions
- Lay out Fudge Stripe cookies stripe side up on a sheet of wax paper.
- Melt caramels with milk in the microwave for 30 seconds. Stir until smooth. Add shredded toasted coconut and mix well.
