- ⅓ cup water
- 2 cups uncooked long-grain white rice
- 4 cups beef broth
- 1 can (15 oz) Southwest-style Corn, drained, or use whole kernel corn
- 1 can (10 oz) Rotel tomatoes and green chilies, undrained
- 1 ½ cups Tostitos Salsa Con Queso
- 1 cup shredded Mexican blend cheese, or Colby Jack
- 2 green onions, sliced
Directions
- In a large skillet or Dutch oven, cook ground beef and onion over medium-high heat until beef is browned and onion is tender. Drain excess grease if needed.
- Stir in taco seasoning and water. Cook for 2 minutes.
- Add rice and beef broth. Bring to a boil.
- Reduce heat to low, cover, and cook for 18 to 20 minutes, or until rice is tender and liquid is absorbed.
- Stir in corn, Rotel, queso, and shredded cheese.
- Continue stirring until cheese is melted and everything is heated through.
