    I’m a senior on a fixed/limited income so I’m always looking for ways to stretch my food budget while enjoying tasty food and not feeling deprived. Well, this is now one of my go-to recipes! I had just a bit over 1 cup of frozen homemade spaghetti sauce (made with ground beef and Italian sausage – delish!). I basically followed your recipe but used just one egg. Cooked/drained spaghetti noodles, mixed all together, placed in my small baking dish that fits my countertop oven. After about 20 minutes covered with the grated cheddar cheese and WOW! And actually, this made 2 dinners for me with an added salad. This will definitely go to my saved file and will be repeated. I had wondered about the cheddar cheese – started to use mozzarella – but cheddar worked perfectly. Thank you from all of us budget-conscious people. No wonder it had 570+ reviews.

    I had leftover pesto pasta. I browned 1/2 lb of ground turkey, added cooked leftover cauliflower and broccoli, mincedar garlic and onion. Mixed together in a 9×13 used mozzarella as the cheese! It was awesome!

  3. I like to start with spaghetti that has been warmed a bit! I don’t worry about the eggs being room temperature but it’s certainly fine if they are!

    Tried this last night with some leftover meatsause and spaghetti noodles and it was delicious!!! Simple to make and a recipe I’ll be using again for sure

    Eating this now as I write this review. Halved the recipe and made some cheese substitutions since I had limited parmesan and no cheddar. I ended up using a mix of provolone, parmesan and bits of brie. It was still all v. delicious! Thanks for the recipe! 🙂
