We love Doritos chips so these Cheesy Dorito Bombs were made for us!

We based this recipe on our Air Fryer Mozzarella Sticks recipe and it was a big hit at our house.

I’m thinking we might try different kinds of cheeses with different Doritos flavors or maybe even different types of chips.

My mind is spinning with all the possibilities.

Key to Success #1 – Cut the Cheese

Well, cut the cheddar … cheese.

You can really cut the cheese any shape that you want, but we’re cutting them into triangles to mirror the Doritos chips in this recipe.

Using a large knife, cut the block of cheese in an X shape.

I use a santoku knife. It’s great for this type of kitchen job.

The ridges along the side of the knife make it so that sticky food like cheese will slide right off.

Take each cheese triangle and cut it in half. Keep cutting the triangles in half until they are about 1 inch long.

Finally, cut the cheese in half to make them thinner if needed.

It’s hard to give exact instructions on how to ‘cut the cheese’ because it all depends on the size and shape of the block of cheese.

The main thing is that you want the triangle of cheese to be about 1 inch in size.

Key to Success #2 – Double Dip them

When you’re cooking cheese sticks or mozzarella sticks in the Air Fryer, make sure the cheese is completely covered with the topping.

On these Cheesy Dorito Bombs, we’re covering the cheese in flour then beaten eggs then crushed Doritos chips.

First, dip the cheese triangles into the flour, coating them well. Be sure to shake off the excess flour.

Next, dip the floured cheese into the egg mixture.

Make sure the flour is fully moistened and there are no dry spots.

The egg ensures that the crushed Doritos will stick to the cheese and not fall off.

Finally, press the cheese triangle into the crushed Doritos chips, making sure the cheese is completely coated with the crumbs.

If your crumbs are not sticking to the cheese, put the crumbs back into the food processor and pulse them a few times to make them finer in texture.

Key to Success #3 – Freeze before Air Frying

It’s absolutely critical to freeze the cheese triangles before you cook them in the Air Fryer.

If you don’t freeze them, a lot of the cheese will leak out into the base of the Air Fryer before the coating gets crispy.

You can use any freezer-safe tray to freeze your Air Fryer Cheesy Dorito Bombs, such as a cookie sheet or a plastic storage container.

I often use my cutting board when I’m flash-freezing something.

My refrigerator is a side-by-side model and the freezer section is not very wide.

Because of this, a lot of my baking sheets will not fit in the freezer.

You can really use any tray that you have on hand.

The main thing is to freeze the cheese triangles so that they are not touching one another.

I recommend lining the tray with waxed paper or parchment paper before freezing so that the cheese does not stick to the tray.

It’s much easier to peel the frozen cheese from the waxed paper than to try to detach it from a frozen tray.

  • Cut cheddar cheese into small triangles.
  • Use a food processor to crush Doritos into fine crumbs. Set aside.
  • In a shallow pan, beat together the eggs. In a separate shallow pan, place flour then season it with salt and pepper. In third shallow pan, place crushed Doritos chips.
  • One at a time, dip the cheese triangle into the seasoned flour then into the egg mixture. Next, press the cheese triangle into the cushed Doritos, fully coating all sides.
  • Place coated cheese triangles in a single layer a baking sheet covered with parchment paper then freeze for at least 2 hours until the cheese is frozen.
  • Preheat Air Fryer to 400 degrees F.
  • In batches, place frozen cheddar triangles into greased Air Fryer basket. Cook for 3 minutes. Use spatula to flip cheese and cook another 2-3 minutes until crispy.
