Ingredients

  • 1 large egg white
  • 1/4 cup honey
  • 2 tsp ground cardamom
  • 1 1/2 tsp ground ginger
  • 1 tsp kosher salt
  • 3 cups unsalted cashews

Instructions

  • Preheat the oven to 300 degrees F. Line a large, rimmed baking sheet with parchment paper.
  • Place egg white in a medium bowl and wisk until foamy, about 1-2 minutes.
  • Heat honey, cardamom, ground ginger, and kosher salt in a small saucepan over medium heat until runny, about 45 seconds. Pour honey mixture into egg white, whisking constantly, until combined. Stir in cashews.
  • Transfer to prepared baking sheet, spreading in an even layer. Bake uncovered for 25 minutes until cashews are toasted, stirring halfway through.
  • Remove from the oven and allow the cashews to cool to room temperature.

Notes

If you don't have cardamom, you can substitute 1 tsp ground cinnamon + 1 tsp allspice. Store in an airtight container for up to 3 weeks.
